Lynca Meats Coconut Pork Stir-fry

This one pan wonder recipe is so quick and easy to whip up, making it perfect for weeknights. Read the recipe below for more details.

INGREDIENTS:

400 g Lynca Meats pork fillet, thinly sliced
3 cloves garlic, finely chopped
2 tbsp ginger crushed
1 tbsp coconut oil
2 tbsp oyster sauce
200 ml coconut milk
½ cup carrots, shredded
½ cup spring onion, finely sliced
½ cup sugar snap peas, shredded
2 red or yellow peppers, diced

METHOD:

  1. Heat coconut oil in a wok on highest heat and fry the garlic and ginger for 1 minute.
  2. Add the pork and stir until it is cooked through.
  3. Add the oyster sauce and coconut milk and stir to combine and heat.
  4. Add the shredded vegetables and toss until slightly softened.
